*The farm Los Naranjos is very high, so the climate is very cold, Elkin have to wait more time
in fermentation than other producers do. Usually the fermentation time in Urrao region is 36
to 48 hours, where Elkin should be 72 hours to get the mucilage easily washed off the bean.
This special microclimate make this coffee different from others. After picked the cherries,
hand selected and then depulped them, after 72 hours fermentation, Elkin washed the
beans and put them on raised bed for 30 days drying process.

Elkin Urrego is one of the most hard-working farmer in Urrego Family. Urrego family have
two farms, Los Naranjos and La Esmeralda, both in San Carlos Village in Urrao region. Elkin
works together with his two brothers and all cultivate Caturra Chiroso Variety.
Chiroso is named after the coffee tree's leaves, which are serrated and semi-open and
closed. It is a local natural variation. It has a delicate aroma, complexity, charming sweet and
brilliant acidity, and a very delicate flavor expression. It has been loved by growers and
markets for more than 30 years.
Nowaday, Chiroso can seen on varies of competition stages such as COE, WBC, Wbrc.
