*most of the coffee farms in Urrao are located at very high altitude, so the fermentation time in Urrao region is
36-48 hours, where Santiago fermented his coffee longer to get more of complexity and the mucilage easily washed off the bean.
After picked the cherries, hand selected and then depulped, after 5 days of open-tank fermentation,
Santiago washed the beans and put them on raised bed for 30 days drying process.

STORY

Santiago Caro is a young coffee producer and a son of José Arcadio Caro who was one of the first group of farmers in the region to begin planting Chiroso with 

Chiroso is named after the coffee tree's leaves, which are serrated and semi-open and
closed. It is a local natural variation. It has a delicate aroma, complexity, charming sweet and
brilliant acidity, and a very delicate flavor expression. It has been loved by growers and
markets for more than 30 years.
Nowaday, Chiroso can seen on varies of competition stages such as COE, WBC, Wbrc.
